I love these boys with all of my heart and am so glad I get to be their mommy. I am also thankful for the great examples I have in my mom, mother-in-law, and grandmothers. It's days like this where we remember the special women in our lives, but we should show our love and appreciation every day. I hope everyone had a wonderful Mother's Day!

Mother's Day
I had a fantastic Mother's Day with my boys. Ryan went above and beyond on some great gifts. This mommy got a pedicure and a beautiful family tree print. Ryan also made a slide show full of pictures of our babies set to some of my favorite tunes. I know he worked on it for a while and it was special to see so many of the pictures that we've taken since Hayes was born. He set the bar pretty high for himself;)

Happy Easter!
We enjoyed a low key Easter with our family of 4 this year. The weather wasn't the best, so it was spent indoors.

Chicken Artichoke Paninis
Panera has this amazing Turkey Artichoke Panini that rocked my world. So of course I wanted to recreate it at home. I totally improvised this Panera-inspired sandwich. Enjoy!
{Chicken Artichoke Panini}
(Not my prettiest food picture. That's what happens when you are holding a small baby while photographing food.)
Chicken ( I use Perdue pre-cooked strips)
1 can artichoke hearts
2 cloves garlic, minced
1/4 cup sour cream
dash lemon juice
salt and pepper
1/4 cup parm cheese
2-3 sweet peppers
1/4 red onion
fresh spinach
fresh focaccia bread
1. Slice your sweet peppers and red onion into long strips. Heat olive oil in a skillet over medium heat. Add peppers and cook until they are all brown and delicious.
2. Rinse artichoke hearts. I like to peel the tough outer layer off as well. Toss into a food processor and grind. Add garlic, sour cream, lemon juice, and salt and pepper and mix again.
3. Chop your chicken into small chunks and put in a bowl. Add the artichoke mixture to the chicken and stir.
4. Don't let your sweet peppers and red onions burn!
5. Slice your bread in half and place on a cookie sheet. Brush some olive oil on the inside of the bread and put in the oven on broil for a few minutes, long enough to get the bread crispy.
6. We are ready to assemble! Spread the chicken artichoke mixture on your bottom slice of bread. Top with the peppers and onions and fresh spinach. Put a fun mustard on your top piece of bread if you're into that kind of thing. And you are done!
7. Enjoy.
Fish Tacos!
Anyone who knows me, knows I love Mexican food. Like seriously love it. Like, could eat it every day love it. This is a delicious and healthy Mexican inspired meal that we love! Paula Deen also inspired me, but I left out the deep-frying of ingredients...
{Fish Tacos}
Fish (duh)
corn tortillas
slaw mix
honey
lime juice
salt, pepper, and other seasonings you prefer
avocado
Pick your fish. I chose frozen catfish filets. Catfish because it's yummy, frozen because it's convenient. Season however you prefer and cook, I baked mine.
For my slaw, I chose a broccoli carrot slaw that was pre-made. Mix in some honey, lime juice, salt and pepper, and let it chill while the fish cook.
If you make your Remoulade dressing ahead of time, it will taste even more amazing. I blogged about my favorite recipe here.
Once the fish is done, you are ready to assemble! Cut your fish into strips or chunks. Put your fish, slaw and dressing in your corn tortillas. I prefer to start with a layer of dressing, add fish, and top it off with slaw and fresh avocado. We ate our tacos with black beans. Delicious! And fairly easy to make!

You started rolling over around 3.5 months and are so proud of yourself when you flip onto your belly.
You make so many funny faces...especially when Mommy pulls out the camera.
You love laughing at your brother and snuggling with Mommy and Daddy. We love you, sweet boy!

Healthy Eats
Finding meals to cook that are healthy and easy can be challenging. We have found a few staples lately that we love.
Bruschetta Chicken
Season your chicken as desired and grill or back. Top with hummus, bruschetta, and black olives. For my bruschetta, I toss tomatoes, fresh basil, olive oil, salt and pepper together. This tastes great with roasted carrots! Toss your carrots in olive oil, season, and roast at 425 for about 25 minutes.
Roasted Veggie Quinoa Salad
cauliflower/broccoli/carrots
mushrooms
quinoa
pecans
parm
balsamic vinaigarette
olive oil
salt and pepper, basil
Chop your veggie of choice and toss with mushrooms in olive oil and seasoning of choice. Roast at 400 for 20-30 minutes. Cook quinoa according to directions. Toast pecans. Once everything is done cooking, combine quinoa, roasted veggies, pecans, and dressing. Top with some parm and enjoy! We ate ours with baked salmon and it was delicious and very filling!
