{Black Eyed Pea Dip}
1 onion, chopped
2 tbsp butter
1 16oz can black eyed peas, drained and rinsed
1 14 oz can artichoke hearts, drained and chopped
1 tbsp parmesan cheese
1/2 cup sour cream
1/2 cup mayo
1 envelope buttermilk ranch mix
1 cup shredded cheese, I used colby jack
Melt butter in a cast iron skillet. Add onion and saute until golden. In a bowl, mix sour cream, mayo, and ranch mix. Add all remaining ingredients and sauteed onions and mix until combined. Pour it all back into the cast iron skillet and bake at 350 for 20 minutes. Enjoy!!!
