Cheesy Broccoli Quinoa

This was a super fast, super healthy, and super delicious side dish to make. Hayes LOVED it...and he is not a big broccoli fan. Original recipe found here.

{Cheesy Broccoli Quinoa}

1 cup quinoa
1 1/2 cups broth or water
2 cups broccoli, chopped
1 cup shredded cheese
salt and pepper to taste

Combine quinoa, broccoli and broth in a large pot and bring to a boil. Cover and lower heat, simmering for about 15-17 minutes or until liquid is absorbed. Remove from heat and add cheese, stirring until melted. Season with salt and pepper. Enjoy!
